About Our Sauces

  All of our sauces are created to pair with the Hickory smoke and the rubs used on our meats. We do not add liquid smoke to any of our products. It is our goal for you to taste the hours of slow cooking through the proper amount of smoke in the meats themselves. We pride ourselves on creating these combinations slowly and naturally. 

  This is a very tangy, vinegar-based sauce that is slightly reddened and sweetened by the introduction of ketchup and brown sugar. This style was originally referred to as the “Lexington Style Dip.” The origins are believed to have come from Bavarian decedents who used the base of the sauce to make red slaw. Upon arrival to North Carolina they incorporated commonly preferred spices and brown sugar used as rubs for pork. Then sometime after 1876, with the commercialization of ketchup, the recipe became what we know it to be today. 

  KC style is the thick, sweet, and tangy style sauce that dominates what we commonly know as barbecue sauce. With the end of the Civil War and the completion of the major railroads, Kansas City became a hub for the stockyards. Because of this, meat was plentiful and southern slow cooking techniques became popular. This sauce was commonly brushed onto the meats as it was smoked and created a nice sweet caramelized coating.

  Our Bold Sauce is an expression of our Kansas City Style. It was created to add a little extra heat but not so much that you would not be able to taste the meat itself. It was important to us to maintain that balance of flavor.

  After the addition of our Smoked Turkey Breast in 2019, our task was to create the perfect complimentary sauce. By pureeing whole cranberries and adjusting our Kansas City Style sauce, we created the perfect blend of sweet and tart to match our lightly smoked Turkey. While originally designed for our Turkey, it has become popular on our other meats as well.

  All of our meats are available without sauce. Some do have a dry rub used during smoking.
